Frequently asked questions

What is bilona ghee?

Bilona ghee is made by churning curd into butter and then cooking the butter down over a low flame. It is not made by centrifuging cream, which is why it takes hours and why the grain is irregular. The aroma and the grain are the tell.

How is this different from A2 cow ghee?

They answer different questions. A2 describes the breed of the cow and the type of beta-casein in her milk. Bilona describes the method. Our ghee is both: it is from A2 desi cows, and it is churned traditionally.

How should I store it?

Keep the jar closed and away from light. Ghee is stable and will keep for months; it does not need a refrigerator. If it turns solid in winter, that is normal — set the jar in warm water for a few minutes.

How do I tell real ghee from a blend?

Real ghee smells of milk and hardens in a cold room; a blend stays soft and smells faintly of oil. It also grains: poured ghee leaves a coarse, uneven texture when it sets.
