How it is made

From milking to bottling

Bilona is not a marketing word here. It names the method, and the method takes five steps and most of a day.

1

Milking with care

Our own desi cows are milked twice a day, by hand, and the milk goes straight into cooling.

2

Heating milk and setting curd

The milk is boiled down and set into curd the old way, over a wood fire, never in a tanker.

3

Traditionally wood churned

Curd is churned into butter slowly and by hand. This is where bilona ghee differs from everything else.

4

Slow cooking the ghee

Butter is cooked down over a low flame until the milk solids separate and turn golden.

5

Filtering and bottling

The ghee is filtered, settled, and filled into glass so you can see exactly what you are buying.

Questions

Frequently asked

Bilona ghee is made by churning curd into butter and then cooking the butter down over a low flame. It is not made by centrifuging cream, which is why it takes hours and why the grains are irregular. The aroma and the grain are the tell.

They answer different questions. A2 describes the breed of the cow and the type of beta-casein in her milk. Bilona describes the method. Our ghee is both: it is from A2 desi cows, and it is churned traditionally.

Keep the jar closed and away from light. Ghee is stable and will keep for months; it does not need a refrigerator. If it turns solid in winter, that is normal — set the jar in warm water for a few minutes.

Orders are packed within two working days. Metro deliveries usually arrive in three to five days, and the rest of India in five to eight. You will get a tracking link by email and SMS.

Yes, if something is wrong with it. Write to us within seven days of delivery with your order number and a photograph, and we will replace the jar or refund it in full. Opened or not, we do not resell returned food.
